You need to have a plan about what you want to accomplish before you take on a project like that.
The world is filled with innumerable incomplete and neglected "bobber" or "streetfighter" projects because their owners lacked the vision necessary to push through to completion.
You can make a custom bike as simply or as complicated as you like.
For exmaple, on the GZ, simply removing the back seat, shaving down the rear mud guard, relocating the licesnse plate, removing the front fender, and getting lowered handlebars will give up a more more lean look - and that doesn't require any frame modifications and very little change to the stock bike, should you want to to sell it later and retain some value.
